Birds’ Nest. Egg wrapped with paper thin vegetables and bacon.

Serves two:

  • 1 zucchini
  • 1 yellow squash
  • 2 eggs
  • 4 pieces of bacon
  • cheese
  • salt and pepper to taste

Preheat oven to 375 degrees. Oil your timbales generously.

Using your vegetable peeler, peel long thin slices of the summer squash. Cut the squash into two and season with salt and pepper.

Pull the bacon, stretching it without ripping it apart. Cut into thirds.

Line the bottom and sides of the timbales with the bacon. Follow with the summer squash; bottom and side to side. I like several layers of summer squash as you can see in the picture above. Sprinkle with cheese. Crack an egg into the well. Sprinkle with salt, pepper and cheese. Top with summer squash and bacon.

Bake in the oven for a minimum of 17 minutes for soft set to 27 minutes for a hard set. Happy eating!
