Serves 2:
- 1 rainbow trout cleaned and gutted.
- 1 medium white onion
- 2 tablespoons suya spice
- salt to taste
Preheat oven to 450 degrees. slice the onions into rings. Leave the rings intact don’t seperate them.
Rub salt all over the fish including the inside. Follow with suya spice mix. Line your baking pan with foil and lay down half of the onions using only one side of the pan. Stuff the inside of the fish with the rest of the onions. Lay the fish down on the onions and roast for 15 minutes. Grabbing each side of the foil, flip the fish on to its other side. Remove the onions and slide them as gently as possible under the fish. Roast for 10 minutes. Remove from oven and run your blow torch over the fish to really crisp up the skin. Dust lightly with more suya spice and happy eating!
Suya spice is nutty spicy mixture from Nigeria, Africa. It can be purchased from your local African market or you can make the mix from scratch from this recipe here. You can always use any spicy seasoning your choice.
