Turkey meatloaf using oats instead of bread crumbs.

Bacon wrapped turkey meatloaf: Serves two.

  • 10 ounces ground turkey
  • 1 egg
  • 1/2 cup roasted ground vegetables (brussels, zucchini, yellow squash, carrots)
  • 1/4 cup rolled oats ground finely
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon ground flaxseed
  • 1 and 1/4 teaspoon powdered garlic
  • 1 and 1/4 teaspoon powdered onion
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon ground pepper
  • Peppered bacon stretched lengthwise and cut in half
  • Barbecue sauce
  • Ketchup
  • salt to taste

Mix together all the ingredients except bacon. Mix with a light hand, folding the ingredients together to make a light melt in your mouth texture versus a dense meaty texture. Form into a preferred shape, mine is a cross between square and oblong. Starting lengthwise, lay bacon side by side with a slight overlap, tucking in the ends under the meatloaf. Then do the same thing across. Mix together barbecue sauce and ketchup in your preferred portions to create your ideal balance of sweet, smoke and tang. Divide the mixture in half and brush the top of the meatloaf with it. Bake the meatloaf for 30 minutes in a 350 degree oven. Remove meatloaf and dab the top again with the sauce and finish baking for another 15 minutes. Happy Eating!!!
