Ratatouille: A quick and easy side dish celebrating summer.

Summer Ratatouille: Serves 4

  • 2 cups fresh spinach 
  • 2 cups fresh spinach 
  • 1 zucchini chopped
  • 1 yellow squash chopped
  • 1 bell pepper chopped
  • 1 red onion chopped
  • 1 cup cherry tomatoes halved
  • I and 1/2 cups canned plum tomatoes chopped 
  • 1/4 cup parsley chopped
  • 2 tablespoons fresh oregano chopped 
  • 1 tablespoon fresh thyme chopped 
  • 1 teaspoon fresh rosemary chopped 
  • Salt and pepper to taste. 

In a pot combine plum tomatoes, bell peppers, onions, herbs, salt and pepper. Let it cook covered on medium low heat for 5 minutes. Add chopped parsley, summer squash and cherry tomatoes, cook for 5 minutes covered. Turn off heat and add spinach. Mix and let spinach wilt from the heat. See? Quick and easy happy eating!
