People overlook cabbage as a cheap and healthy alternative to leafy greens. On most days, a head of white cabbage is usually less than a dollar where I live. The purple cabbage costs a little more but if you’ve just scored the white one for 0.49 cents the purple one hovering at 2 dollars is still a deal.
Most kids I have come come across will eat cabbage without fanfare. I thinks it’s because of its mild nature. So if you’re bored of salads, give slaws a try.
Two cabbage slaw: serves two.
One of the reasons I love cabbage so much is that a little goes a long way because of its heartiness. So for two people, 6 leaves of each cabbage, shredded, is more than enough. Toss the cabbage with chopped parsley, a little bit of caraway seeds if using, green olives, kalamata olives and a herby vinaigrette. That’s it. I’m not giving measurements because it’s a slaw to suit to your taste. Adjust the quantity of the ingredients according to what you enjoy the most and have a happy eating.
Cabbage is flying under the radar as a nutritional power house. It helps to prevent diabetes, lowers the risk of cardiovascular diseases and is chock full of cancer preventing antioxidants.
