What is better than crispy roasted chicken? Crispy roasted chicken with crispy apple wood smoked bacon threaded through it!!!! The technique of weaving or wrapping bits of fatty meat through or around the flesh of beef, chicken, pork or even fish is called barding. The purpose of which is to give leaner cuts of meat more flavor and moisture while it cooks. This technique died a long time ago as livestock were bred to be fattier and hunting became sport, one only bards now just because we can.

Ingredients: Serves 2

  • 2 chicken leg quarters
  • 6 pieces of bacon (raw)
  • 2 tablespoons of rendered bacon fat
  • 4 tablespoons of maple syrup
  • 2 teaspoons of paprika
  • 2 teaspoons of chili powder
  • 1 teaspoon of cayenne
  • salt and pepper to taste
  • 1/2 tablespoon of bacon fat
  • 1 tablespoon of maple syrup

Pull the bacon gently to stretch it from top to bottom and from side to side. Slice the bacon in two lengthwise and then across.Rub chicken legs with all the spices, salt, pepper and maple syrup. Make 1/2 inch slits on the chicken, pushing the paring knife through the chicken about 1/2 inch deep and through to the other side in a row. Thread divided strips of bacon through these slits. Brush with rendered bacon fat and roast for 45 minutes at 425 degrees. Mix the 1/2 tablespoon of bacon fat together with the maple syrup and baste the chicken with that 20 minutes into cooking and again at the end of cooking.
