Beyond Zoodles; give me a beet!!!

Hello is it beet you’re looking for? Hehe. Part two of beyond zoodles is beet and pear noodle salad. So simple that all the steps and ingredients will fit into one short paragraph.

Roast beets at 425 degrees for 20 minutes. Let cool. Spiralize the beets and pears (firm and not too ripe) into a bowl. Top with walnuts, chopped parsley and labne/goat cheese. Drizzle with tahini, a zesty vinaigrette and toss.
