Bean and quinoa veggie burger

Earlier this week, I posted a whole days’ menu using oatmeal. Here is the recipe for quinoa bean veggie burger, it’s vegan and gluten free. Makes 4 delicious patties.

First let’s make oat flour in the food processor:

  • 1/2 cup dry rolled oats
  • 2 tablespoons dried onions
  • 2 tablespoons dried garlic
  • Blend to a fine meal.
  • Veggie patties
  • 1 tablespoon oil
  • 1/2 a can fat free refried beans
  • 1/3 cup cooked quinoa
  • 1/3 cup roasted ground vegetables (Brussels, carrots, bell peppers, shallots, yellow squash)
  • 2 tablespoons flaxseed meal
  • 2 teaspoons oil set aside
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon coriander powder
  • 1/8 teaspoon cumin powder
  • 1/8 teaspoon cayenne powder
  • Salt to taste.

In a bowl mix thoroughly the oat flour, oil, refried beans, flaxseed meal, ground vegetables and all the seasonings. Form patties using your hands or a burger press. In a skillet on medium heat add the 2 teaspoons of oil and coat the pan. Fry the veggie burgers until brown and toasty per side about 5 minutes. Get your buns ready with your guacamole and other favorite toppings.

Nutrition geek alert!!! Fiber from the quinoa, omegas from the flaxseed, protein from the beans and vitamins from the vegetables. Truly happy eating 😋
