A chocolate a day keeps the doldrums away.

I usually make my one serving cakes by feel, so I have no exact measurements to give you. I also use cake mix because when I want cake, it’s usually a NOW! kinda thing. So fiddling about with multiple ingredients and measuring things is an impediment to my need for instant chocolate gratification. The rule of thumb I go by is, the thicker the mixture the denser the cake.

Spoon into a bowl, some devil food cake mix. Add a couple tablespoons of sour cream and a couple tablespoons of instant chocolate pudding mix. As per the cocoa powder, the more you add, the stronger the chocolate flavor and the less sweet the cake will be. I usually go for about three tablespoons for an intense chocolate hit. I add a teaspoon or two of instant coffee granules to really make that chocolate flavor pop. Add an egg, some neutral oil like canola and a binding liquid of choice. I use almond milk. Mix till all the ingredients are incorporated and pour into a baking vessel. Top with bittersweet chocolate morsels like Ghiradelli and a variety of nuts.

Bake in a preheated oven at 350 degrees for a light pan and 325 degrees for a dark pan. It takes about 10 to 15 minutes for the cake to set. I know the cake is ready when I poke the middle with a toothpick and bits of almost done cake cling to it. I want moistness from this cake so the toothpick should not come out clean.

I remove my cake, make my way to my cosy bed, snuggle in deep with Netflix and have a happy eating.
