Oatmeal and apple pancakes: Serves two.
- 1 grated apple
- 1 egg
- 3/4 cup almond milk
- 1/2 cup baking mix
- 1/2 cup rolled oats ground semi finely
- 1/4 cup ground salted almonds
- 2 tablespoons brown sugar
- 1 and 1/2 tablespoon ground flaxseeds
- 1/8 teaspoon baking powder
- Butter and canola oil mix for greasing the pan
In a bowl mix all the ingredients together and when I say mix, I actually mean fold with a light hand about 6 times. You can get away with folding a few more times, however if you over mix aggressively, you will not get light fluffy pancakes. Spoon into greased pan over medium low heat. Flip the pancakes when the tops bubble and remove when the bottoms brown, which is about 2 to 3 minutes. Happy Eating!
